Muscle Busting Chorizo Omelette Recipe

  • 4 Large Eggs – 30g protein
  • 1 Shallot
  • 50g Mature Cheddar – 12.7g protein
  • A bit of oil

Before you start, chop up the chorizo. I typically use chorizo rings, and I like to quarter sections of it, but you can adjust the size according to your preference. Slice the shallot as thinly as possible. Get your cheddar ready by cutting slices that you can break up when adding to the pan. I normally crack my eggs in a bowl or cup and give them a quick mix with a fork and give them a quick season with sale and pepper.

Instructions:

  1. Chorizo: Heat a medium to high frying pan and add the chorizo. I like to give it a few minutes to start cooking, allowing it to become well-done and release its delicious oils.
  2. Shallot: Add the thinly sliced shallot to the pan. The shallot will not only infuse its flavor but also absorb some of the fantastic chorizo oil, enhancing the overall taste of the dish.
  3. Eggs: Now, it’s time to add the star of the show – the eggs. Crack the four large eggs into the pan. Make sure to spread them out evenly. To control the heat, you can turn down the stove a bit at this point. Let the eggs cook until they start to set.
  4. Cheddar: Once the eggs have begun to set, it’s time to add the mature cheddar. The heat of the eggs will melt the cheese, and as you fold it into the omelette, it will create a creamy and cheesy delight.
